These Booze-Washed Cheeses Will Change Your Life

In the world of cheese, there are a handful of distinct varieties: fresh cheeses, like Boursin; aged cheeses, like Parmigiano-Reggiano; bloomy-rind cheeses like Brie; and finally, the washed-rind cheeses. Époisses
This legendary (and legendarily stinky) cheese is washed in a brine that’s been infused with a local brandy, Marc de Bourgogne. Let’s just start by saying… it was a tough gig! 6 delicious local cheeses over 5 days… spare a thought. :)

I asked Lauren if there is some kind of method to this, you know 'start with the soft and work your way up to the hard' and she advised me to just dig in… and start eating… so that's what I did.

Herb & Garlic Fetabelle - Soft, salty and full of flavour! It’s hard to think of a dish that this beautiful marinated cheese wouldn’t top. I had mine over a smoked trout salad and the results were delicious. The best part about this cheese is that it has been preserved in olive oil, so if submerged it will last for months… as if!

Blue Moon - I’m a big blue cheese fan and this one did not disappoint. Perfect on a cheese platter atop a slice of nectarine, this variety is milder and harder than your average blue. A great place to start if you’re new to the world of blue cheese.

Goldenbelle - This is a nice alternative to a camembert, stronger in flavour and prettier too! You are immediately hit in the face with it’s ‘sticky’ smell but don’t let this fool you. This guy is a complex dude, with its rich notes an absolute delight to your taste buds.

The Chesworth Family down at Hunter BelleDairy have been milking cows along the Hunter river for over 100 years. A love for cows is certainly in their blood, and when the 6th generation dairy farmer Geoff Chesworth and his wife Tania were milking over 400 holstiens in Denman NSW in 2007 the real struggle of farming took it's toll. With one of the worst droughts they had farmed through, the young Chesworth family decided it was time to hang up the milk cups and move on from their dairying days.

Geoff and Tania threw themselves into the deep end submerging themselves in a life of cheese, taking over a small cheese factory and growing it from strength to strength. Ok, so back to the part where I am eating all the cheese.

Vintage Cheddar - This one is actually a staple in my Your Food Collective orders. Aged for around 18 months, the vintage cheddar is bitey and firm. You can enjoy this cheese sliced on crackers or on toastie. It’s a fantastic all rounder.

Black Magic - This mysterious wheel is unique to Hunter Belle. A decadent triple cream brie with a fermented garlic centre and just a hint of balsamic vinegar. This one is not for the faint hearted, it’s sweet, savoury, strong and soft all at the same time.

Labelle - A soft, labna style cheese made from yogurt. The Labelle cheese is smooth and tangy. Admittedly I never paired this cheese with anything as I ate it straight out of the jar, from the fridge as a snack. Warning: this cheese is highly addictive.

Hitting the local gym is not always necessary. Taking a 15-minute walk around the neighborhood, taking walks on lunch breaks, taking the steps instead of an elevator, and parking farther away when shopping are examples of how busy moms can squeeze in exercise during the day.

5. Eat Healthy. There are foods that promote calmness and foods that increase stress levels. Busy moms can ask themselves if they are eating too much sugar and caffeine, and if they are getting enough protein. They can also evaluate if they are eating plenty of fresh fruits and vegetables and staying away from refined and processed foods. Healthy eating is very important for any busy mom. 6. Call a friend. For any busy mom, it is always important in life to have at least one relationship where they can just vent and know that a listening ear and unconditional acceptance will be given.

If you do not like cooking, don’t have the time, or can’t stand the smell of cooking foods while pregnant, try these tricks instead of cooking at home:

  • You can find cheese blintzes, waffles, pancakes, and a variety of premade foods in your grocer freezer section. They may not have the same nutritional profile as cooking for yourself, but they are often better than the other options on days when you cannot cook.
  • Purchase muffins from your local bakery and keep them in the freezer until ready to eat. Pay attention to serving size, many bakery muffins are two or more servings each.
  • Several companies make mixes for cornbread, muffins, and other baked goods. You can find them in the baking section of your grocery store. Baked goods can be made ahead and stored in an airtight container for 2 or 3 days.
  • Substitute a can or box of your favorite premade soup for the chicken corn chili. Be sure to read the labels to make sure the soup you get doesn’t contain excess fat and salt.
  • Beef with broccoli may take advanced cooking skills, but is often easy to order as takeout at your local Chinese restaurant. You can also find Asian and Italian foods in the grocery store freezer section that require very little cooking.

Improve pregnancy nutrition by freezing meals

Some days you just do not have the time or energy to cook. So your options are limited to a peanut butter sandwich or your local drive through right? Wrong! With a little advanced planning you can have a homemade meal anytime.

I first became interested in freezing meals because of the promise it held for doing less work in the kitchen and less money for food. What mother does not want more time and money? I dutifully bought the book about cooking once a month and studied their suggestions. It only took me two months to realize once a month cooking was not for our family. I did not have the energy or desire to cook for a full day and eat frozen meals most nights of the week.

My exploration into the wonders of frozen foods was not all for nothing. I do not cook for a month at a time, but at any random time you can probably find three or four meals in my freezer, able to be thawed in the microwave and ready to eat in less than an hour. It does save me money and I do not have to eat commercial fast food. Here are some things I learned about freezing meals:

Containers

Invest in good containers that will go from freezer to oven. I use the Pyrex glass dishes that can be used in the microwave and have a tight sealing rubber lid to prevent freezer burn. Some things I use freezer jars, but not many.

Plastic freezer bags work well for some things, but can get messy when you try to get the food out. In addition, they need to be laid flat on thier side while freezing to ensure a good shape for storage.

Pay attention to the shape of your container and the space in your freezer. Containers with handles that hang off the end may take extra space. If you have a dish that absolutely must be used for a meal, but do not want to leave the dish in the freezer, line the pan with foil before preparing the food. After the meal is frozen, remove the food and foil from the pan and store in a plastic freezer bag.

Easy Meals to use

Split big meals. When I make lasagna, I do not prepare it in a 9吉 pan because it is too big for my family. Instead I make two or three smaller lasagnas, we eat one that night and the extras get frozen.

Make a double batch. Most soups and many baked meals will freeze well. It takes very little extra time to double the recipe so you have one for dinner and one in the freezer. Other meals that work well are shredded barbecues or taco fillings. Pancakes and french toast freeze well, and are easy to reheat for a quick breakfast.

Take advantage of food sales by cooking a favorite recipe in bulk and freezing it in glass dishes or freezer bags. Another great trick is to buy a larger amount of meat (which is usually discounted) and freeze it with the marinade. Put it in the refrigerator in the morning and it will be ready to grill for dinner that night.

Baked goods often freeze well allowing you to enjoy them fresh anytime. Cookie dough can be frozen in individual portions before baking, allowing you to bake only the amount you want at a time. Yeast breads can be frozen before the final rise. Let them thaw overnight in the refrigerator, then rise before baking. Quick breads can be frozen as batter.

Always try a new recipe before you decide to freeze it. Trust me, you do not want 4 pounds of barbecue that no one likes taking up residence in your freezer.
