Tripe soup

Wash the bone and bring to a boil. When it makes a lot of foam, throw the water, wash the meat well, the pot and put it back on the fire together with 1 cleaned carrot, 1 bell pepper cut in half, peppercorns, bay leaf. When the meat has boiled well, strain it (take the meat off the bone and add it to the soup) remove the carrot, pepper, peppercorns, bay leaves and add the washed belly, celery, parsnips grated. Let the belly boil, then add vinegar to taste.

Grate 1 carrot and heat it in a little oil. Put in a strainer and squeeze the juice into the soup

Beat the yolks with the cream and add the soup until we reach the soup temperature, add in a thin thread, stirring constantly. Put the pot back on the fire, add the crushed garlic and bring to a boil and turn off the heat.
